Halibut Fillets

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Slice the halibut fillets rather thin and brush each piece with lemon juice, salt, and pepper.

  2. Place a layer of seasoned mashed potatoes between each two pieces of halibut.

Assemble and bake

  1. Cover the top with beaten egg and a mixture of breadcrumbs and melted butter.

  2. Place in a pan and add enough milk to cover the bottom.

  3. Bake at 400°F (200°C) until the crumbs are brown and the fish flakes easily.

Serve

  1. Serve with Hollandaise or egg sauce.

What each ingredient does

Halibut fillets
Forms the main body of the dish, cooking to a flaky texture as it bakes.
Mashed potatoes
Forms a soft layer between the fish pieces, adding moisture and body.
Beaten egg
Binds the breadcrumb topping and helps it set and brown in the oven.
Breadcrumbs
Form a crisp, browned crust on top when baked with butter.
Butter
Adds fat that helps the breadcrumbs brown and gives richness.
Milk
Adds moisture to the pan so the bottom layer stays tender while baking.

The step that matters

Bake until the crumbs brown and the fish flakes easily. Halibut is lean and dries out quickly in the oven, so it should be checked as it flakes. Overbaking toughens the proteins, while underbaking leaves the fish opaque and undercooked.
