Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Scald, peel, and slice off the stem end of each tomato, leaving about two-thirds of each tomato.

  2. Place the tomatoes cut side down on the buttered bread slices.

  3. Arrange the bread and tomatoes on a buttered baking pan.

Season and bake

  1. Sprinkle each tomato with salt, pepper, and sugar.

  2. Bake in a 350°F (175°C) oven for 30 minutes.

What each ingredient does

Tomatoes
Soften and release juices that moisten the bread while baking.
Bread
Forms a buttered base that soaks up tomato juice and browns in the oven.
Sugar
Adds sweetness and helps the tomato surface brown as it bakes.
