Cottage Cheese

Ingredients

Directions

  1. Heat sour milk in a pan on low until the whey rises to the top, being careful not to boil it.

  2. Place a cheesecloth over a sieve and pour the whey and curd into it to drain for a few minutes.

  3. Gently press the curd dry with your hands.

  4. While still warm, mix in a good lump of butter and coarse sea salt.

  5. Add enough sweet cream to achieve a mashed potato consistency and form into small balls.
