Swedish Timbale Cases Filled with Chicken Salpicon

Ingredients

Directions

  1. Mix the flour and salt in a bowl.

  2. Beat the egg yolks and gradually add the cold water.

  3. Stir the yolk mixture into the dry ingredients, then add the olive oil or melted butter and beat well.

  4. Gently fold in the whipped egg whites and refrigerate for at least 2 hours or overnight.

  5. Heat the fat until smoking hot and warm the iron in it.

  6. Dip the iron into the batter, then plunge it back into the hot fat until golden brown.

  7. Remove the cooked case from the iron by tapping the handle.

  8. In a saucepan, melt the butter and add the mushrooms, truffle, smoked tongue, and quenelles.

  9. Add the brown sauce and Madeira, simmer until reduced by one-third.

  10. Combine the sauce with the chicken mixture and simmer for 10 minutes before serving in the timbale cases.
