Watermelon Cake

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Fill a cake pan one-third full with white or silver cake batter.

  3. Color the remaining batter pink with fruit coloring and fill the pan two-thirds full.

  4. Add washed and dried currants near the top of the batter.

  5. Bake until done.

  6. Ice the cake with white icing streaked with spinach green and flavor with vanilla.

  7. Make the pink batter deep in color to resemble ripe watermelon.
