Fried Fish

Ingredients

Directions

  1. Cut off the head and backbone of the fish, then slice the body into five or six pieces.

  2. Dip the fish pieces in Indian meal or wheat flour, then in the beaten egg, and finally in bread crumbs.

  3. Heat hot lard or salt pork in a thick-bottomed skillet until boiling hot.

  4. Place the fish in the skillet, skin side up, and fry slowly.

  5. Turn the fish when it is light brown and serve with tomato sauce or lemon slices.
