What each ingredient does

Codfish
Forms the main body of the chowder and becomes flaky and tender as it cooks.
Potatoes
Starch that thickens the broth slightly and adds body to the chowder.
Salt pork
Renders fat that carries flavour through the chowder and browns to add savoury depth.
Milk
Adds richness and creaminess to the broth.

The step that matters

Add the milk at the end. Milk can curdle or scorch if it boils hard for long, so it should be added after the fish and potatoes are cooked and heated only until hot.

Swap the onion

How well each one fits the dish's main ingredients (potato, pork, milk, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, pork, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
