Finish and make the gravy

  1. When the potatoes are half done, reduce the cooking liquid and add a piece of butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Slow boiling in salted water makes the meat tender and yields a flavorful cooking liquid.
Potatoes
Absorb flavor from the cooking liquid and become tender, starchy and soft as they steam.
Butter
Adds richness and fat to the gravy, and helps the meat and potatoes brown.
Flour
Starch that thickens the gravy as it cooks, giving it body.

The step that matters

Brown the meat and potatoes nicely. Browning relies on the Maillard reaction between surface proteins and sugars at high heat, which builds color and savory flavor. Pale, wet surfaces brown poorly, so the pieces should be dry and the heat sufficient.

Swap the potato

How well each one fits the dish's main ingredients (beef, butter, flour):

  1. Chivefits about as well
  2. Leekfits about as well
  3. Potatothe original
  4. Shallotfits about as well

Fit is the average pairing score against beef, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
