Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Slow boiling turns the tough connective tissue tender while the meat stays moist.
Cold water
Covers the meat and cooks it gently from the start, keeping it juicy rather than seizing.

The step that matters

Keep the boil slow after skimming. A hard, rapid boil toughens meat fibres and makes the broth cloudy. Lowering the heat to a gentle simmer lets collagen break down slowly, leaving tender, clear results.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, turnip, parsnip, carrot, potato):

  1. Leekfits better
  2. Beetrootfits better
  3. Chivefits better
  4. Cabbagethe original

Fit is the average pairing score against beef, turnip, parsnip, carrot, potato. Candidates are from the same food group and used in at least 100 recipes.
