Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the lobster

  1. Break up the coral of the lobster and place it on paper in a 300°F (150°C) oven for 30 minutes.

  2. Pound the coral in a mortar.

  3. Chop the meat of the lobster tail and claws into small pieces.

Make the sauce

  1. Thirty minutes before serving, prepare ½ cup of drawn butter sauce.

  2. Stir in the chopped lobster, a pinch of coral, cayenne pepper, and salt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster
Provides the main sweet, meaty flavour and the body of the sauce.
Drawn butter sauce
Adds fat and richness, carrying the flavour and keeping the sauce smooth.
Coral
Adds concentrated shellfish flavour and a deep colour to the sauce.
Cayenne pepper
Adds a light background heat that sharpens the lobster flavour.

The step that matters

Drying the coral in a low oven. Low, gentle heat dries the coral so it becomes brittle enough to pound to a fine powder. Higher heat would scorch its delicate, bitter-prone flavour, and under-drying leaves it hard to crush.
