What each ingredient does

Chickens
Provide the main protein that becomes tender as the stew simmers.
Pepper pods
Supply the main flavour and colour of the stew through their juice.
Onions
Add sweetness and savoury body as they soften in the stew.
Flour
Thickens the stew liquid so the sauce clings to the chicken.
Butter
Adds richness and a smoother mouthfeel to the sauce.

The step that matters

Rub the pepper pods through a sieve after steaming. Steaming softens the pods so their juice and pulp can be pressed through. Skipping the sieve leaves tough skins and seeds in the stew, giving a gritty texture.
