What each ingredient does

Chickens
Provide the main protein, which browns in the skillet and flavors the broth as it simmers.
Okra
Releases natural thickeners during long simmering, giving the gumbo body and a silky texture.
Tomatoes
Add acidity and moisture that help build the broth's savory flavor.
Onions
Add sweetness and aromatic depth as they soften in the pot.
Flour
Thickens the liquid when rubbed with butter and stirred in at the end.
Butter
Adds richness and, blended with flour, helps thicken and smooth the gumbo.

The step that matters

Browning the chicken without scorching. Browned surfaces build deep, roasted flavor through the Maillard reaction, but scorched bits taste bitter and can carry into the whole pot.
