Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken or veal
Provides the main protein, which becomes tender through boiling and slow stewing.
Butter
Adds richness and fat, carrying flavor through the stewed curry.
Curry powder
Supplies the spiced aroma and flavor that define the dish.
Flour
Thickens the cooking liquid into a sauce that clings to the meat.
Boiled rice
Adds bulk and absorbs some of the sauce, and is served alongside.

The step that matters

Pouring in the cooking liquid. Adding enough liquid to nearly cover the meat keeps it moist during stewing. Flour mixed into the sauce can clump if not blended smoothly first, leaving lumps in the thickened curry.
