Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Escaloped Salsify
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Scrape the salsify roots thoroughly and wash them in cold water.
Cut the salsify into rings and boil for 3 minutes, then drain.
Pour hot water over the salsify to cover and boil until tender; season with pepper and coarse sea salt.
In a baking dish, layer salsify, then bread or cracker crumbs, and butter; repeat layers until the dish is full.
Finish with a layer of crumbs, add butter on top, and fill with rich milk.
Bake for 20 minutes at 400°F (200°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
