Lady Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and powdered sugar until light and fluffy.

  3. Gradually add the sifted flour and mix well.

  4. Fold in the whipped egg whites gently.

  5. Add bitter almonds for flavor and mix until combined.

Bake and frost

  1. Pour the batter into square, not very deep tins.

  2. Bake until golden and a toothpick comes out clean.

  3. For frosting, flavor with vanilla and spread over the cooled cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and add richness and tender texture.
Powdered sugar
Creamed with butter to add sweetness and help create a light, fluffy base.
Sifted flour
Provides the structure that holds the cake together as it bakes.
Egg whites
Whipped and folded in to add lift and a light, airy crumb.

The step that matters

Folding in the whipped egg whites. Gentle folding keeps the air bubbles from the whipped whites intact; overmixing deflates them, leading to a denser, less risen cake.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, butter, egg, almond):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, flour, butter, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
