Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almond paste

  1. Blanch the almonds in boiling water, remove the skins, and let them cool.

  2. Pound the cooled almonds in a mortar, adding a little rose water until smooth.

  3. Mix the almond paste with 1 pound of sweet almonds and 1 tablespoon of essence of bitter almonds.

  4. Cover and refrigerate overnight.

Make the macaroon mixture

  1. Combine 1 pound of powdered sugar, 8 beaten egg whites, and 1 teaspoon of nutmeg in a bowl.

  2. Lightly stir the sugar and egg whites together, then gradually mix in the almond paste.

  3. If the mixture is too thin, beat in more powdered sugar.

Shape and bake

  1. Line a baking pan with buttered parchment paper and drop spoonfuls of the mixture onto the pan, spacing them apart.

  2. Dust each macaroon with powdered sugar and bake in a hot oven at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the macaroons.
Egg whites
Add structure and lightness, helping the macaroons hold their shape and rise.
Powdered sugar
Sweetens the mixture and helps it bind to a stable, spoonable texture.
Essence of bitter almonds
Adds a concentrated almond aroma to the paste.

The step that matters

Adjusting the mixture's consistency. If the batter is too thin, the spoonfuls will spread on the pan instead of holding their shape. Adding powdered sugar thickens it, which helps the macaroons keep their form while baking.

Swap the nutmeg

How well each one fits the dish's main ingredients (almond, sugar, egg, rose, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Allspicefits less well
  4. Tarragonfits less well

Fit is the average pairing score against almond, sugar, egg, rose, butter. Candidates are from the same food group and used in at least 100 recipes.
