The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture and add richness as they set gently over low heat.
Egg whites
Add lightness and body to the mixture as it cooks and cools.
Fine sugar
Sweetens the cream and softens its texture once frozen.
Orange juice
Provides the main flavor and liquid base for the cream.

The step that matters

Cooking over low heat until nearly boiling. Egg proteins set and thicken gradually at low heat. Too much heat can scramble the eggs, leaving lumps, so stir constantly and stop as soon as it nears a boil.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
