Pressed Chicken

Ingredients

Directions

Cook the chicken

  1. Cook the chicken in a kettle with the onion, sage, salt, and pepper until done.

  2. Ensure there is about 2 cups of liquid left in the kettle.

Layer and set

  1. Cut the meat into pieces and pack a layer in a dish.

  2. Add a layer of bread crumbs, then another layer of chicken, and top with bread crumbs.

  3. Pour the reserved liquid over the layers and let it cool.

  4. Do not cover tightly or refrigerate until completely cool to avoid food safety issues.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the dish once cooked, cut and packed into layers.
Bread crumbs
Absorb the cooking liquid and help the layers hold together as the dish sets.
Onion
Adds savory aroma and flavor to the cooking liquid that the dish absorbs.

The step that matters

Let it cool uncovered before refrigerating. Hot food sealed in a covered dish cools slowly, letting bacteria multiply in the warm zone. Cooling loosely and fully before covering and chilling keeps the dish safer.

Swap the sage

How well each one fits the dish's main ingredients (chicken, onion, pepper, bread):

  1. Garlicfits better
  2. Thymefits better
  3. Celeryfits better
  4. Sagethe original

Fit is the average pairing score against chicken, onion, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
