Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the rice until well done.

  2. Fry the onions and red peppers in butter until softened.

Combine and bake

  1. Add the cooked tomatoes, salt, and black pepper to the mixture.

  2. Stir in the cooked rice and mix well.

  3. Transfer to a porcelain-lined dish and spread bits of butter on top.

  4. Bake at 400°F (200°C) until lightly browned.

What each ingredient does

Rice
Forms the bulk of the dish and absorbs the tomato liquid as it bakes.
Onions
Soften and sweeten as they fry, adding savory depth to the rice.
Red peppers
Add sweetness and a fresh, vegetal aroma when fried until soft.
Cooked tomatoes
Provide moisture and acidity that flavor the rice as it bakes.
Butter
Adds richness and helps the top brown in the oven.
