Why it works: Butter and bread are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Canned Corn Timbales
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 400°F (200°C).
Make the batter
In a bowl, mix corn pulp, egg yolks, salt, cayenne pepper, melted butter, sugar, and bread crumbs until well combined.
Gently fold in the stiffly beaten egg whites.
Bake and serve
Drop the mixture into well-buttered tin molds, filling them 2/3 full.
Place the molds in a pan of hot water and bake for 20 minutes.
Turn the timbales out onto a shallow dish to serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Egg yolks
- Add richness and help bind the custard-like mixture as it sets.
- Egg whites
- Whipped air lightens the mixture and helps it rise and set with a delicate texture.
- Corn pulp
- Provides the main body and sweet corn flavour of the timbales.
- Bread crumbs
- Absorb liquid and add body so the mixture holds its shape when baked.
- Melted butter
- Adds fat for a tender texture and rich flavour.
The step that matters
Folding in the egg whites. Whipped egg whites trap air that makes the timbales light. Folding gently keeps that air in; stirring vigorously deflates the foam and leaves the timbales dense.
