Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Gives the bread its coarse texture and sturdy crumb.
Graham flour
Adds a nutty flavour and a denser, more tender structure.
Whole wheat flour
Contributes bran and gluten for body and a hearty crumb.
New orleans molasses
Provides sweetness, dark colour, and moisture.
Sour milk
Its acidity reacts with baking soda to lift the batter.
Baking soda
Reacts with the acidic sour milk and molasses to leaven the bread.

The step that matters

Keeping the kettle boiling steadily for the full 4 hours. Steaming cooks the batter gently and sets the crumb without drying it. If the water level drops or the pans are left exposed, the bread can dry out or cook unevenly, so the pans must stay fully submerged.
