Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
Sift the sugar and measure it, then sift the flour three times and measure.
Make the batter
In a bowl, whip the egg whites with a pinch of salt until foamy.
Add the cream of tartar and continue whipping until very stiff.
Gradually add the sugar while beating, then add the flavoring and mix.
Sift in the flour and gently fold it in, stirring as little as possible.
Bake
Pour the batter into a baking tin and bake for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into foam, they trap air and give the cake its light, airy structure.
- Sugar
- Stabilizes the whipped whites and adds sweetness, keeping the foam glossy and tender.
- Flour
- Provides the set structure that holds the airy foam once baked.
- Cream of tartar
- Acidifies the egg whites, helping them whip to a stronger, more stable foam.
The step that matters
Fold in the flour gently. Overmixing knocks air out of the whipped egg whites, so the cake bakes up dense instead of light and airy. Fold just until the flour disappears.
