Veal Pot Pie

Ingredients

Directions

Cook the veal

  1. Select thin portions of veal with equal lean and fat.

  2. Remove the outer skin and cut the meat into serving pieces.

  3. Place the meat in a stew-pan, add salt, and cover with hot water.

  4. Cover the stew-pan and cook slowly for 2–3 hours.

Make the dumplings and finish

  1. For dumplings, sift flour, baking powder, and salt together, then add milk and beat into a smooth dough.

  2. Place a spoonful of dough on each piece of meat, ensuring it does not sink into the broth.

  3. Add dumplings and steam for 15–20 minutes without lifting the cover.

  4. Remove the meat and dumplings, then thicken the broth with butter and flour mixed into a smooth paste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Lean and fat together give the slow-cooked meat tenderness and flavour.
Flour
Thickens the broth into a smooth gravy when cooked with butter.
Baking powder
Releases gas in the dough so the dumplings rise and turn light.
Milk
Moistens the dry flour into a dough that steams to a soft texture.
Butter
Adds richness and body to the thickened broth.

The step that matters

Keep the lid on while the dumplings steam. Lifting the cover releases steam and cooling air, so the dumplings can collapse or turn dense before they set.
