What each ingredient does

Mutton
Provides the main protein, which becomes tender during long, slow simmering.
Ghee
Adds fat that carries the spice aromas and browns the meat and onions.
Yogurt
Adds moisture and mild acidity that tenderizes the meat and gives the sauce body.
Onions
Fried until golden, they add sweetness and thicken the sauce as they break down.

The step that matters

Fry the ground spices until fragrant. Spices bloom in hot fat and release their aroma; if they scorch, they turn bitter and can taint the whole curry, so keep the heat moderate and stir constantly.
