Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into the omelet's structure and give it a tender, custardy body when cooked gently.
Butter
Adds richness and helps keep the eggs from sticking to the saucepan.
Shad roe and mushroom mixture
Provides the main filling, adding savory flavor and a contrasting texture inside the folded eggs.
White cream sauce
Adds moisture and richness, complementing the eggs and filling on the plate.

The step that matters

Cook the eggs slowly over low heat. Egg proteins set quickly at high heat, becoming tough, dry and rubbery. Gentle heat and minimal stirring keep the omelet soft and tender while it firms enough to fold.

Swap the parsley

How well each one fits the dish's main ingredients (egg, pepper, butter, roe, mushroom, cream, sauce):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against egg, pepper, butter, roe, mushroom, cream, sauce. Candidates are from the same food group and used in at least 100 recipes.
