What each ingredient does

Turbot
Is the main protein; gentle simmering firms its flesh and keeps it moist and flaky.
Coarse sea salt
Seasons the fish and, in the soaking and cooking water, firms the surface proteins slightly.

The step that matters

Boiling the turbot slowly. Water held at a gentle simmer cooks the fish evenly, while a hard boil toughens and breaks up the delicate flesh. Cooking time should follow the thickness of the fish.
