Fried Haddocks

Ingredients

Directions

  1. Wash and clean the haddocks well and soak them in coarse sea salt overnight.

  2. Rinse and dry the haddocks, then cut off the head, tail, and fins.

  3. Carefully skin the haddocks without tearing the flesh, then cut the flesh from the bone and divide each side into two pieces.

  4. Dredge the fish in flour, dip in beaten egg, and coat with bread crumbs.

  5. Fry the haddocks in hot lard or dripping until browned on both sides, ensuring the fat does not scorch the fish.

  6. Drain the fried haddocks on a rack for a few minutes before serving.

  7. Garnish with parsley and serve with oyster sauce or melted butter.
