Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; cooking in water and cooling in the liquid helps keep the meat moist.
White vinegar
Adds a sharp acidity that brightens the seasoned chicken.
Celery
Adds crisp texture and a fresh, mild crunch to the salad.
Mayonnaise dressing
Adds fat and creaminess that binds the chicken and celery and carries moisture.

The step that matters

Cooling the chicken in its cooking water. Letting the chicken cool slowly in its cooking liquid lets the muscle fibers relax and reabsorb some liquid, which helps keep the meat juicy rather than dry once it is cut and dressed.

Swap the radish

How well each one fits the dish's main ingredients (chicken, vinegar, pepper, celery, lettuce):

  1. Mustardfits better
