Ingredients

Directions

Make the stock

  1. Cut all the lean beef off the shank.

  2. Heat a little beef suet in a kettle until browned.

  3. Add the bones and cover with water.

  4. Cover the kettle tightly and cook slowly until the meat falls off the bones.

  5. Strain the soup through a colander and let it sit overnight to remove fat.

Finish the soup

  1. Fry a sliced carrot, onion, and small turnip until browned.

  2. Add the sugar, mace, cloves, allspice, and celery seed to the vegetables.

  3. Cook the mixture slowly in the soup for one hour.

  4. Strain again before serving.

  5. If using vermicelli or pearl barley, soak them in water.

What each ingredient does

Lean beef from the shank
Its meat and bones give the soup its beefy flavour and body.
Beef suet
Browning in the fat adds roasted, savoury flavour to the broth.
Onion
Browned onion adds sweetness and savoury depth to the soup.
Carrot
Browned carrot adds natural sweetness and colour to the broth.
Small turnip
Browned turnip adds earthy sweetness and depth to the broth.
Sugar
Sugar helps the vegetables brown and rounds out the savoury flavour.

The step that matters

Chilling the strained stock overnight. As the stock cools, fat rises and solidifies on the surface, where it can be lifted off. Removing it leaves a clearer broth that is less greasy.

Swap the mace
