Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turtle beans (black beans)
Provide the bulk of the soup and, once pressed, its body and thickness.
Soup bone
Adds savory flavor to the broth during the long cooking.
Powdered cloves
Add a warm, aromatic spice flavor to the soup.

The step that matters

Pressing the bean pulp through the colander. Pressing pushes the softened bean pulp through the strainer, which thickens the soup. Cooking the beans fully first makes them soft enough to pass through, so pressing too little leaves the soup thin and pressing too hard can force through skins that cloud the texture.

Swap the beans

How well each one fits the dish's main ingredients (clove, pepper, egg, lemon):

  1. Chickpeafits better
  2. Walnutfits about as well
  3. Chestnutfits about as well
  4. Beansthe original

Fit is the average pairing score against clove, pepper, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
