Directions

Prepare

  1. Pick and draw the fowl, then wash it well in two or three waters.

  2. Wipe the fowl dry and dredge it with flour inside and out, along with pepper and salt.

  3. Prepare a dressing of bread and cracker crumbs and fill the body and crop of the fowl.

Roast and make the gravy

  1. Bake the fowl for 1 to 2 hours, basting frequently while roasting.

  2. Stew the giblets in a saucepan.

  3. Just before serving, chop the giblets finely.

  4. After removing the fowl, add the giblet cooking water and chopped giblets to the roast gravy.

  5. Thicken the gravy with a little flour mixed with water, boil, and serve in a gravy dish.
