Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

Roast

  1. Place the roast in the oven and baste frequently while roasting.

  2. Roast for 15 minutes per pound for rare, longer for well done.

Make the sauce and serve

  1. For the sauce, combine the drippings with 1 tablespoon of Harvey or Worcestershire sauce and 1 tablespoon of tomato ketchup.

  2. Thicken the sauce with browned flour and serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
The main cut of meat; it is the dish itself and carries the cooked flavour.
Flour
Light dredging coats the surface, helping it brown and giving the drippings body.
Browned flour
Thickens the sauce and adds a toasted, nutty flavour and colour to the gravy.
Tomato ketchup
Adds sweetness and acidity to the sauce, balancing the savoury drippings.
Harvey sauce or worcestershire sauce
Adds savoury, tangy depth to the sauce through its acidity and fermented notes.

The step that matters

Roast for 15 minutes per pound for rare, longer for well done.. Meat keeps cooking after it leaves the oven, and internal temperature rises steadily with time. Pulling the roast at the right point prevents it from overcooking into dryness and grey, tough meat.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
