What each ingredient does

Saltpetre
Preserves the meat's pink colour and adds a cured flavour during salting.
Coarse sea salt
Draws moisture out of the beef and seasons it while curing.
Sugar
Balances the salt's sharpness and feeds the flavour of the cure.

The step that matters

Keep the beef fully submerged in the brine. Any meat above the brine line can spoil or dry out and cure unevenly. The weight keeps every piece covered so the salt and saltpetre penetrate it evenly.
