Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, mix the crushed crackers, eggs, salt, pepper, sage or summer savory, and chopped veal until well combined.

  3. Pack the mixture tightly into a deep tin pan.

Bake and serve

  1. For added flavor, top with butter before baking.

  2. Bake slowly for 1 hour.

  3. Let cool, then slice thinly to serve as a relish for tea.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw veal
Forms the body of the loaf, giving it its meaty texture and substance.
Eggs
Bind the chopped veal and crackers so the loaf holds together when sliced.
Boston crackers
Absorb moisture and add bulk, helping the loaf stay tender rather than dense.

The step that matters

Packing the mixture tightly into the pan. Firm packing removes air pockets so the loaf sets as one solid mass. Loose packing can leave it crumbly and prone to falling apart when sliced after cooling.

Swap the sage

How well each one fits the dish's main ingredients (egg, pepper, veal, butter):

  1. Parsleyfits better
  2. Sagethe original
  3. Nutmegfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against egg, pepper, veal, butter. Candidates are from the same food group and used in at least 100 recipes.
