Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Shape the loaf

  1. In a large bowl, combine the veal, salt pork, rolled crackers or bread crumbs, eggs, black pepper, sage, mace or nutmeg, and coarse sea salt. Mix well and shape into a loaf.

  2. Place the loaf in a baking dish.

Bake and serve

  1. Melt the butter and mix it with a little water; baste the loaf with this mixture.

  2. Sprinkle a small quantity of rolled crackers on top of the loaf.

  3. Bake for about 3 hours.

  4. Let it cool, then slice thinly to serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw veal
Forms the main body of the loaf, giving it substance and a sliceable texture.
Raw salt pork
Adds fat and moisture, keeping the lean meat from drying out as it bakes.
Boston crackers or bread crumbs
Absorbs liquid and helps the loaf hold together with a tender texture.
Eggs
Bind the mixture and set when baked, helping the loaf hold its shape when sliced.
Butter
Adds fat and richness, and helps the surface brown while baking.

The step that matters

Let it cool before slicing. Cooked meat loaf is still soft and its egg and protein structure is only firming as it cools. Slicing it hot can crumble it, so cooling fully lets it set into clean slices.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, bread, egg, pepper, sage, butter):

  1. Marjoramfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against veal, pork, bread, egg, pepper, sage, butter. Candidates are from the same food group and used in at least 100 recipes.
