Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the bulk of the roll and gives it its meaty body and texture.
Eggs
Set when hard-boiled and add structure and firmness to the sliced roll.
Butter
Adds fat and richness, keeping the lean meat moist and flavorful.
Crackers
Bind the meat and absorb liquid, helping the roll hold its shape and browning on top.
Cream
Adds fat and moisture, softening the lean veal.

The step that matters

Cook slowly for 2 hours. Slow, gentle heat with added water keeps the lean meat from drying and toughening, and lets the cooled roll set firmly enough to slice thinly.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
