What each ingredient does

White spine cucumbers
Provide the main crisp, watery vegetable base of the relish.
White onions
Add sharp, pungent flavor that mellows during long pickling.
Green peppers
Add fresh, grassy crunch and bulk to the mixture.
Black mustard seed
Contributes sharp, pungent heat that infuses into the vinegar over time.
White mustard seed
Adds milder pungency and a familiar mustardy bite.
Coarse sea salt
Draws moisture out of the vegetables, firming their texture during draining.

The step that matters

Draining the mixture for 24 hours. Salt draws water out of the cucumbers, onions and peppers. Draining removes that liquid so the vegetables stay crisp and the vinegar is not diluted in the jar.
