Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Mince Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, combine apples, boiled beef, butter or drippings, molasses, and water. Add allspice, cinnamon, salt, cloves, vinegar, and grated nutmeg. Mix well.

Assemble and bake

  1. Pour mixture into a pie crust and cover with another crust.

  2. Bake for about 45 minutes or until crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide bulk, moisture and tartness that balances the sweet molasses.
Boiled beef
Adds savoury meatiness and richness to the filling.
Butter or beef drippings
Adds fat for richness and a silky mouthfeel in the filling.
Molasses
Provides dark sweetness and depth of flavour, and moisture.
Vinegar
Adds acidity that brightens the rich, sweet filling.

The step that matters

Baking until the crust is golden brown. The crust must be fully baked and browned so it sets and cooks through, while the rich filling heats evenly. Underbaking leaves a soggy base, and overbaking dries the filling.

Swap the apple
