Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Beat half of the sugar with the butter until creamy.

  3. In a separate bowl, beat the other half of the sugar with the egg yolks.

  4. Add the whipped cream to the yolk mixture and mix well.

  5. Whip the cream until stiff and strain it through a sieve to remove the thin part.

  6. Dip the edges of the sponge cake pieces in egg whites to help them stick together.

  7. Arrange the sponge cake in a mold, covering the bottom and sides.

  8. Pour the cream mixture over the sponge cake and top with more sponge cake.
