Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body.
Milk
Forms the liquid base that the tapioca swells and thickens in.
Egg yolks
Enrich the custard base, adding richness and helping it set.
Egg whites
Whipped to stiff peaks, they form a light meringue topping that browns.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until they hold firm peaks, because air trapped in the foam gives the meringue its volume. Underwhipped whites deflate and weep, and overwhipped whites turn dry and grainy.

Swap the coconut
