Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the whipped cream so the dessert holds its shape when chilled.
Heavy cream
Whipped into foam to give the dessert its light, airy texture.
Sugar
Adds sweetness and balances the richness of the cream.

The step that matters

Add the hot gelatine mixture to the whipped cream while stirring continuously.. Gelatine that is added to cold cream in lumps or set too early will form strands instead of blending evenly. Stirring keeps it dispersed as it cools, so the cream stays light and sets smoothly.
