Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps preserve the starter against unwanted microbes.
Brown sugar
Provides sugar that yeast consumes, fuelling fermentation and adding sweetness.
Flour
Supplies starch and nutrients that feed the fermentation and thicken the mixture.
Potatoes
Add starch and body, and give the starter a thicker texture.

The step that matters

Letting the mixture ferment in a warm place. Fermentation depends on yeast activity, which slows in cold conditions and can stall. Warmth lets the yeast multiply and produce gas and flavour, so the mixture needs to be kept warm until bubbling shows it has fermented.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
