Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and 2 cups of sugar until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the milk and sour cream mixture (1½ cups sour cream beaten with 1 cup sugar).

  4. In another bowl, combine the flour and baking powder, then gradually add to the wet mixture.

  5. Fold in the chopped almonds.

Bake

  1. Pour the batter into a greased cake pan and bake for about 30‑40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creamed with sugar, it traps air and gives the cake a tender, rich crumb.
Eggs
Add structure and richness as they set during baking, binding the crumb.
Flour
Forms the cake's structure as its proteins set when heated.
Baking powder
Releases gas in the batter, helping the cake rise and become light.
Sour cream
Adds moisture and a slight tang that keeps the crumb tender.
Almonds
Add nutty flavour and texture throughout the cake.

The step that matters

Creaming the butter and sugar. Beating butter with sugar until light and fluffy traps air bubbles that help the cake rise and keep it tender. Under-creaming leaves a dense texture.
