What each ingredient does

Red raspberries
Provide the main fruit flavor and the juice that forms the base of the drink.
Vinegar
Extracts the raspberry flavor and adds the sharp acidity that defines the drink.
Sugar
Sweetens the concentrate and balances the acidity of the vinegar.

The step that matters

Boil for 20 minutes. Boiling the juice with sugar thickens it into a syrup and keeps the concentrate stable for bottling. Stopping early leaves it thin and more likely to spoil in storage.

Swap the raspberry

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits about as well
  4. Raspberrythe original

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
