Chicken Salad

Ingredients

Directions

Prepare

  1. Remove the meat from the bones of the cooked chickens and chop it finely.

  2. Chop the celery separately, not as finely as the chicken, using a ratio of one-third celery to two-thirds chicken.

Make the dressing

  1. In a bowl, combine vinegar, mustard, melted butter or oil, egg yolks, salt, and pepper.

  2. Beat the dressing mixture and heat it over low heat, stirring until nearly cold.

Combine

  1. Mix the dressing with the chicken and celery, then add the chopped hard boiled eggs.

What each ingredient does

Cooked chicken
Forms the bulk and meaty structure of the salad.
Celery
Adds crisp texture that contrasts with the soft chicken and dressing.
Egg yolks
Emulsify the fat into the dressing and add richness and body.
Vinegar
Adds acidity that brightens the flavour and balances the richness of the dressing.
Butter or oil
Adds fat that gives the dressing smoothness and moisture.
Mustard
Helps hold the dressing together and adds a sharp, savoury note.

The step that matters

Heating the egg yolk dressing over low heat. Egg yolks thicken gently when warmed slowly, but they scramble if the heat is too high or the dressing is left unstirred. Gentle, constant stirring keeps the dressing smooth and evenly thickened.

Swap the celery

How well each one fits the dish's main ingredients (chicken, vinegar, mustard, butter, egg, pepper):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, vinegar, mustard, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
