What each ingredient does

Lamb chops
Main protein; cooking time sets how rare or well done the meat becomes.
Fine bread crumbs
Form a crisp, golden coating that browns when fried in hot fat.
Egg
Binds the bread crumbs to the chops so the coating stays on during frying.

The step that matters

Fry in hot fat. The fat must be hot enough to crisp the crumb coating quickly. If it is too cool, the crumbs absorb oil and turn greasy, and the meat cooks before the coating browns. Frying time controls doneness, so watch the clock for rare or well done.
