What each ingredient does

Sweetbreads
Provide the main meaty filling that gives the croquettes their substance and flavor.
Cream
Thickens with the butter and flour into a binding sauce that holds the filling together.
Flour
Thickens the butter into a roux, giving the cream sauce body and helping bind the filling.
Butter
Enriches the roux with fat and flavor, and helps the sauce turn smooth.
Lemon juice
Acidity that brightens the sweetbreads and helps keep their flavor clean during cooking.

The step that matters

Cool the filling fully before shaping. A warm, soft filling cannot hold its shape and may split or leak in the hot fat. Chilling firms the starch-thickened cream so the croquettes keep their form and brown evenly.
