What each ingredient does

Egg whites
Whipped into foam, they give the icing its light, stiff, airy structure.
Powdered sugar
Dissolves into the whipped whites to sweeten and thicken the icing.
Coconut
Adds chewy texture and coconut flavour to the icing and the cake's outside.

The step that matters

Beat the egg whites until stiff.. Egg whites must be whipped to stiff peaks so they trap air and hold their shape. Under-whipped whites make a runny icing that slides off the cake, while fat or yolk residue in the bowl can stop them from foaming.

Swap the coconut

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
