Cream Puffs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a saucepan, combine boiling water and butter; boil slowly until the butter melts.

  2. Add flour and stir constantly until it pulls away from the sides of the pan.

  3. Allow the mixture to cool, then add eggs one at a time, beating well after each addition.

Bake and fill

  1. Drop spoonfuls of the mixture onto a buttered and papered baking pan.

  2. Bake in a 350°F (175°C) oven until puffed and golden, about 30 minutes.

  3. Once cooled, cut a slit in each puff and fill with whipped cream sweetened with powdered sugar and flavored with vanilla.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and moisture that let the dough puff and set as it bakes.
Flour
Forms the starch and gluten framework that holds the puffs' shape.
Butter
Adds fat and richness, and its moisture turns to steam that helps the puffs rise.
Whipped cream
Adds a light, moist, creamy filling that contrasts with the crisp shell.

The step that matters

Add the eggs one at a time, beating well after each addition. Each egg must be fully incorporated so the batter becomes smooth and elastic enough to trap steam. Adding eggs too quickly, or to a mixture still hot, can break the emulsion and leave the puffs flat or greasy.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, flour, egg, cream, sugar):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Coconutfits less well
  4. Figfits less well

Fit is the average pairing score against butter, flour, egg, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
