Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and salt.

  3. Cut in the butter until the mixture resembles coarse crumbs.

  4. Add milk or water gradually until a soft dough forms.

  5. Roll the dough on a floured surface to ½ inch thick.

  6. Butter the sides of a cake pan and place the rolled dough inside.

Bake and serve

  1. Bake in the preheated oven until golden brown.

  2. Once baked, separate the layers while hot and spread the bottom layer generously with the mashed strawberries.

  3. Cover the top with more strawberries and serve immediately.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with liquid.
Baking powder
Releases gas during baking so the shortcake rises and turns light.
Butter
Cut into the flour to create flaky layers and tender texture.
Milk or water
Hydrates the flour so the mixture comes together into a soft dough.
Fresh strawberries
Add sweetness, juiciness and fruity flavor between and over the layers.

The step that matters

Cut in the butter until coarse crumbs form. Butter should stay in small cold pieces rather than fully blending into the flour. As it melts in the oven it leaves pockets that make the shortcake flaky and tender instead of dense.
